Roseau welcomes: Johathan Zayes

Monday evening was the Annual Roseau Civic and Commerce Meeting. It was a fun evening spent with people who all share a love for Roseau. Roseau Proud!

The article on the back page highlights the meeting but here I want to talk about the DESSERT! Ohhhhh the dessert!

Mary Hoffer had said she was able to get one of the Puerto Ricans, Jonathan Zayes, that work at Polaris to make the dessert. He may work at Polaris, but he is also a chef and Ohhhhh is he ever!

He made a chocolate mousse mirror glaze cake and it was DELICIOUS! Normally I am the "sweets" person at our house, but Kyle finished his mousse cake before me! It was an undescribable, amazing, I want more kind of dessert.

Jonathan definitely knows how to create a dessert to leave you wanting more. If his dream of opening a restaurant in Roseau becomes a reality, in Roseau I will be his first customer!

Thank you Mary for recruiting Jonathan. We should have him make treats for ALL our monthly meetings too! It would be a YES from me!

I also want to thank Cheri and Julie for serving on the board. They both stepped down this year.

It was great working with both of you. They were both Roseau Proud and helped out the Civic and Commerce for years. Their dedication and passion for promoting Roseau will be missed.

Danielle Byfuglien and Chase Holter will be filling the positions. I look forward to working with both of you! We have only had a few days as board members together, but your enthusiasm and passion are amazing!

Bring on 2020 there isn't anything this team can't handle!

Quick Update

Dad had his last chemo treatment this week and the next step is Mayo in February. Thank you to everyone who has been keeping dad in your thoughts and prayers!

Super-Quick

Salsa Chicken

1 cup uncooked regular long-grain white rice

2 cups water

4 boneless skinless chicken breasts

2 tablespoons olive or vegetable oil

1/2 teaspoon salt

1/4 teaspoon pepper

1 medium zucchini, chopped (2 cups)

1 cup Old El Paso™ Thick 'n Chunky salsa

1 can (11 oz) whole kernel sweet corn, drained

1/4 cup sour cream

2 tablespoons chopped fresh cilantro

Directions

Cook rice in water as directed on package. Meanwhile, between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.

In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Sprinkle chicken with salt and pepper. Cook chicken in oil 6 to 10 minutes, turning once, until golden brown on outside and no longer pink in center. Remove chicken from skillet; cover to keep warm.

In same skillet, heat remaining 1 tablespoon oil. Cook zucchini in oil 3 minutes, stirring occasionally. Stir in salsa and corn. Reduce heat to medium; cook 2 minutes longer or until thoroughly heated.

Serve chicken over rice; top with vegetable mixture, sour cream and cilantro.

Joke of the Week

"Hi! My name is Gertrude," said the lady next to him on the plane. "It's so nice to meet you! I'm flying to New York for my grandson's third birthday. I'm so excited! I remember when he was just a little thumbkin and now he's already three! It's really hard to believe. He's the most adorable thing you've ever seen! You know what? Hold on, I think I might have a picture on me. Let me take a look in my purse, yes, here it is, just look at him, isn't he adorable? Do you see his dimple on his left cheek? Simply adorable! I could stare at his picture all day. Oh my, and you should hear him on the phone! He is just the cutest, he says to me in the cutest voice "Hi Grandma!" It just gets me all teary eyed." After what seemed like two hours for the poor man sitting next to her, Gertrude seemed to realize that perhaps she was talking a bit too much. "You know, I feel terrible! Here I am just talking and talking without letting you get in a word edgewise! Tell me..what do you think about my Grandson!"
