Triple Layer Cracker Toffee Bars

The Needles Highway is a spectacular 14-mile road through pine and spruce forests, meadows surrounded by birch and aspen, and rugged granite mountains.

The road's name comes from the needlelike granite formations.

The roadway was carefully planned by former South Dakota Governor Peter Norbeck, who marked the entire course on foot and by horseback. Construction was completed in 1922.

Speaking of his "carefully planned road", I'm not sure I like it 100%. If you meet a car, and Kyle is driving, he gets WAY too close to the edge of the road. As the passenger looking down, my thought was if we go over I will be gone instantly! It was straight down and you couldn't see the bottom. Other than the racing of my heart a few times, the views were astonishing and I would go see it again.

If you travel the highway you can also stop at Sylvan Lake, a unique rock formation called the Needle's Eye. It was named for the opening created by wind, rain, freezing, and thawing. It's breathtaking to say the least.

Toffee Bars

Ingredients

90 buttery rectangular crackers (from 13.7-oz box)

1 can (14 oz) sweetened condensed milk

1 cup packed brown sugar

1/2 cup butter

1/4 cup milk

1 bag (11.5 oz) milk chocolate chips

Directions

Line 13x9-inch pan with foil. Spray foil with cooking spray. Place 30 of the crackers in bottom of pan.

In 2-quart saucepan, mix condensed milk, brown sugar, butter and milk. Cook over medium heat until butter is melted, stirring frequently. Increase heat to medium-high; heat to boiling. Boil 5 minutes, stirring constantly.


Pour one-third of the caramel mixture over crackers in pan. Arrange 30 of the crackers over caramel. Top with one-third of the remaining caramel mixture. Repeat with remaining crackers and caramel.

In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring every 30 seconds, until melted and smooth. Pour over caramel; spread evenly. Refrigerate about 1 hour or until set. Cut into 6 rows by 8 rows. Store covered up to 4 days.

How a marriage works... A newlywed couple had only been married for two weeks. The husband, although very much in love, couldn't wait to go out on the town and party with his old buddies .

So, he said to his new wife, 'Honey, I'll be right back.'

'Where are you going, coochy coo?' asked the wife.

'I'm going to the bar, pretty face. I'm going to have a beer.'

The wife said, 'You want a beer, my love?'

She opened the door to the refrigerator and showed him 25 different kinds of beer brands from 12 different countries: Germany, Holland, Japan, India, etc.

The husband didn't know what to do, and the only thing that he could think of saying was, 'Yes, lolly pop...but at the bar...you know...they have frozen glasses...'

He didn't get to finish the sentence, because the wife interrupted him by saying,

'You want a frozen glass, puppy face?'

She took a huge beer mug out of the freezer, so frozen that she was getting chills just holding it.

The husband, looking a bit pale, said, 'Yes, tootsie roll, but at the bar they have those hors d'oeuvres that are really delicious... I won't be long, I'll be right back. I promise. OK?'

'You want hors d'oeuvres, poochi pooh?' She opened the oven and took out 5 dishes of different hors d'oeuvres: chicken wings, pigs in blankets, mushroom caps, pork strips, etc.

'But my sweet honey... At the bar... You know...there's swearing, dirty words and all that...'

'You want dirty words, dickhead? Drink your (expletive) beer in your damn frozen mug and eat your mother (expletive) snacks, because you are Married now, and you aren't (expletive) going anywhere! Got it, (expletive)?'

...and, they lived happily ever after
