A couple fun moments on our final adventure

It was sad when our adventures ended for the year. Sarah and I plan to start planning for next year's adventures in December and January. We have a few places already picked out!

We both decided we liked camping more than ice-fishing. We are looking forward to ice-fishing season for a little something to do during the winter months, though.

When I was looking back at all the photos from our Lake Superior/Black Beach adventure, it made me think about a few of the highlights.

We traveled to Wisconsin for two reasons. Brian needed to get some Spotted Cow Beer, and we wanted Wisconsin added to our states we have been to list. I will say the Wisconsin cheese tasted mighty fine, too!

While Brian was getting his Spotted Cow, he found some black cherry freezies for us. They may have had some alcohol in them, but they sure were delicious!

One night at our campsite Sarah decided to pop some popcorn over the campfire. It was quite fun watching her and listening to all the tips from the guys. Of course, they know how to do everything when it's over a campfire.


If you don't know it by now, I like rocks! Everywhere I travel rocks come home with me.

Sarah is always helpful finding rocks for me, too. While we were at Black Beach, she located one in the water and was determined to get it for me. As you can see from the photo, she got it for me!! She may have gotten a little bit wet, oops. But the rock is now at my house where it belongs!

On our drive home Kyle spotted a bear. Of course, I needed a photo. Luckily, we dropped our camper off in Bemidji for warranty work and winterizing. It was much easier to stop and backup for my photography session. He was so cute! I wanted to pet him. No, I didn't. But, I wanted to!


It was a fun-filled summer and I can't wait to do it all again.

We are definitely going back to the Lake Superior area next year, but we will go towards the end of September. We want to see the fall colors on our next trip there.

I think it's safe to say, we enjoyed all our experiences and places we traveled, but Black Beach was our favorite this year.

Shipwreck Casserole

Ingredients

I lb ground beef

1/2 teaspoon garlic powder

I (15 oz) cans kidney beans, drained

2 white onions, thinly sliced

3 large baking potatoes, peeled and thinly sliced

I (6 oz) can tomato paste

I (8 oz) can tomato sauce

I teaspoon Italian seasoning

2 celery stalks, diced

2 cups cooked white rice

11/2 cups cheddar cheese, grated

Salt and black pepper, to taste

Directions

Preheat oven to 350°F and set aside a 9x13-inch baking dish.

In a medium skillet, brown the ground beef and season with salt, pepper, and garlic powder. Drain, if needed, and stir in drained kidney beans. Set aside.

Line baking dish with the sliced onions, followed by the sliced potatoes. Season with salt and pepper.

In a small bowl, whisk together the tomato paste, tomato sauce, I can of warm water, and Italian seasoning. Pour half of the tomato mixture over potatoes and onions.

Arrange celery evenly over the top and spread with rice. Season again with salt and pepper.

Top rice with beef and kidney bean mixture, followed by remaining tomato sauce.

Cover dish tightly with foil and bake until potatoes are tender, 45 minutes. Remove foil, top with grated cheese, and bake 15 minutes more. Enjoy!

Joke of the Week

Two young boys walked into a pharmacy one day, picked out a box of tampons and proceeded to the checkout counter.

The pharmacist at the counter asked the older boy, 'Son, how old are you?'

'Eight', the boy replied.

The man continued, 'Do you know what these are used for?'

The boy replied, 'Not exactly, but they aren't for me. They're for him. He's my brother. He's four."

"Oh, really?" the pharmacist replied with a grin.

"Yes." the boy said. "We saw on TV that if you use these, you would be able to swim, play tennis and ride a bike. Right now, he can't do none of those."
