Adventures and Critters are my favorites

While in Idaho we did get to see a few critters, which is one of my favorite things to do. I like to go for drives and see what critters we can spot when we are in different areas. I like to explore!

When we were on our way back to the rental house from the hospital, we saw two moose drinking in a river. Kyle stopped so I could watch them.

I was kinda disappointed because he didn't go as close as he could have.

But when we were on our way back from meeting in Idaho Falls on Friday with his Dad, Mom, his Uncle Bob and Aunt Denise for lunch, the moose were back drinking. This time he drove up close so I could video them.

They reminded me of Blu drinking, a gallon of water goes in their month and two gallons comes back out.

It was fun to meet up with family in Idaho. They were at the start of their vacation and we were at the end of ours. We had an amazing lunch/breakfast. Kyle picked a great meeting point.


Another adventure was on our way home in Yellowstone National Park.

Kyle was being nice since I didn't get much of a vacation and took the longer route home through the park so I could have a little adventure.

Adventure was definitely what I got! I've seen the videos of bison around vehicles, but to have it happen is unexplainable. I loved it and I told Kyle I was sure my heart was back to working cuz i felt it pounding as the bison were right by my window and surrounding the vehicle!

Pecan Crack

Ingredients

1 cup butter – Choose unsalted butter in this recipe, the crackers have enough salt!

1 cup sugar– granulated sugar is best!

40 Saltine Crackers – you can use graham crackers, Ritz crackers, or Club crackers. But for a traditional cracker toffee, start with Saltines.


1 pkg. of milk chocolate chips – you can also use dark chocolate or white chocolate if you prefer!

1 cup pecans – completely optional. You can add them before baking (and you get a toasted, nutty flavor...or sprinkle them on the melted chocolate.

Directions

Melt your butter in a small saucepan, then add your sugar. Bring this mixture to a rolling boil.

Line 40 saltine crackers on a 15 x 10 x 1-inch baking sheet.

Pour the melted butter and sugar mixture over the crackers, slowly, making sure that all the crackers have been covered in butter. You want all that buttery goodness in your Saltine Toffee!

Sprinkle everything generously with chopped pecans, then bake this for about 15 minutes. You want to make sure that the crackers look brown and caramelized.

Use a small spatula to remove the hot saltine cracker toffee from the pan and place it on parchment paper (or wax paper).

Melt your chocolate chips and spread over each cracker. To make this easier, I pour my melted chocolate into a large Ziploc bag, then snip the corner and drizzle generously over each cracker. Works like a charm!

Once the chocolate has hardened, store Saltine Toffee in an airtight container at room temperature for up to 5 days (if it lasts that long). ENJOY!

Joke of the Week

As a Roadway driver is driving east on Route 66 he sees a truck driving west and the CB crackles to life.

"Hey Roadway driver, who are the two biggest idiots in America?" comes from the CB.

The Roadway driver replies, "I don't know." The other trucker says " You and your brother."

Well, the Roadway driver gets annoyed but the other driver tells him "It's just a joke - tell it to the next truck you see."

Well the Roadway driver drives for about an hour and finally sees another truck. He gets on the CB and says "Hey other truck, do you know who the two biggest idiots in the world are?"

The other trucker says, "I don't know, who?"

The roadway driver replies "me and my brother!"
