Chef Joab Spina’s day begins early. Although Joab’s Algoma’s Eatery & Tavern hours are presently 4 p.m. to 9 p.m., Monday through Saturday, Joab is in the kitchen at Algoma hours before then, completing prep necessary to create the variety of delicious dishes on Algoma’s menu.
“Algoma’s menu is very prep intensive since everything is made fresh from scratch, including the sauces and desserts,” explained Joab.
Joab gives credit to Chef Mark Marthalen at Ciattis Ristorante, an Italian Restaurant in St. Cloud, for much of his training as a chef.
