Chex Scotcheroo Stacks

It's hard to believe that Thanksgiving was here and gone already!

My family gathered at my house. Sarah and I did some cooking. I think it's safe to say everyone was full and enjoyed our family time.

On Friday, Sarah and I went to the Roseau Craft Show...WOW! There were a lot of people and venders.

Roseau was busy with everyone out shopping, enjoying the great weather and Black Friday sales!

On Saturday, we decided to make some Christmas planters. We started at the RTR and did the two planters by the front door. Come check them out!

Next, it was to my house to make one for my mom. We brought it to her and I thought we would put it by her front door, but she had other plans and kept it inside so she could see it.

We hauled her Christmas decorations upstairs for her and set up her tree, too. We put the lights on it so her sister Janet could help her decorated it on Sunday.

We headed back to my house and Sarah created her planter. She was a bit tired from all we had done, and almost called it quits. I helped her get started and she got her second wind and finished it!

Now, I need to get mine done for my house. I did get the greens in last night so maybe tonight I will finish it!

Chex Scotcheroo Stacks

Ingredients

12 cups Chex cereal (You can use a couple varieties.)

2 cups light corn syrup

2 cups sugar

2 cups creamy peanut butter

Directions

Line large trays or cookie sheets with parchment or wax paper. Measure Chex cereal into a large heatproof bowl.

In saucepan, combine corn syrup and sugar over medium heat. Bring to boil then remove from heat and stir in peanut butter until smooth.

Pour over cereal and gently fold together until cereal is completely covered.

Scoop out onto prepared trays.

When cool and set, make the topping.

Topping:

1 cup creamy peanut butter

1 cup chocolate chips

1 cup butterscotch chips

In microwave safe bowl, add peanut butter, chocolate chips, and butterscotch chips. Microwave on 50% power for 3-4 minutes, stirring every 30 seconds until melted together and smooth. Spoon 1 T. of mixture over each stack.

Let set up at room temperature or put in fridge to speed up the process.

Makes 30 large stacks. Mixture can be pressed into a sprayed sheet pan and then drizzle topping over and cut into bars.

Joke of the Week

400 passengers but only 200 meals were loaded onto a flight from Delhi to New York City.

It was only discovered after take off, when the flight attendants started going through their preparations for the meals.

So, the airline had bungled, and the crew was in a fix.

However, one smart flight attendant had an idea.

A couple of hours into the flight, she nervously announced, "Ladies and gentleman: we don't know how this happened, but we have over 400 people on board, but only 200 dinners. Anyone who is kind enough to give up their meal to someone else, will receive unlimited free liquor for the duration of the flight!"

Her next announcement came six hours later: "Ladies and gentlemen, if anyone wants to change their mind, we still have 180 dinners available!"
